Well, my son's b-day party will be on Saturday. Every year I try to build a project (welding) that I use for the party, such as Grillzilla and GriddleZilla. Well, no time this summer for welding. So, I'm gonna break out the deep fryers. I also try to do something different each year in terms of the menu from green chile casseroles to tacos, brisket, pork butts and even whole chuck rolls and even Sloppy Joes! So now everyone expects something bigger and better. Was going to do a shrimp/crawfish boil but all I'm doing is boiling water! :becky: Plus, all I can get around here is frozen crawfish. I've had them before and they aren't very good.

So, Pitmaster T put this thread out a while back and I said to myself...."Self, this year it's gonna be fried chicken!" Not just any fried chicken either. You need to see the video to see what I'm talking about.

I mixed up the Scandal Sprinkle and Sista Dredge this evening. When Donnie says, "It's not a batter, it's an aggressive rub." He ain't kidding. I'll be going with a couple of turkey fryers and using the 10qt. fish fryer pans. I'll be getting 4-5 10lb bags of leg quarters from a local meat supplier. They sell the bags for .99 lb. Can't go wrong with that price!

They also sell a 40lb. case of wings for $71.60. May get one of these too and worse case scenario is I'll have wings left over to toss in the freezer.

Already have the water slide rented out too! Gotta have the water slide.:laugh:

Scandal Sprinkle:
2.62 oz. Powdered Rick James (Donnie recommended granulated James and Prince, but I bought powdered and didn't realize it.)
2.5 oz. Powdered Prince
2.12 oz. Tina Turner
.95 oz. Don Cornelius
2.62 oz. George Clinton
2.62 oz. Little Richard (I used the empty bottle that contained the Rick James and just filled it with the Clinton and Richard, so by weight, it was probably more.)
2.87 oz. Carlos Santana
3.75 oz. of Chubby Checker/Larry Graham Mix.

I hope I got all the codes right. Took me a while to find em all!:becky:

The Sista Dredge:
2-2.62 oz. bottles of Larry Graham
2-2.62 oz. bottles of George Clinton (Again, I just used the empty 2.62 oz. bottle.)
2.37 oz. Cinnamon (Couldn't remember who cinnamon is!)
2.5 oz. Prince
2.5 oz. Rick James
10lbs. All Purpose Flour

I have a 5lb bag of all purpose flour that I'll be using for the dredge, but I don't know if I'll be using the entire bag yet. Probably so, as the rub part of the dredge is BOLD!:becky:

More than enough sprinkle and if I need more dredge, I have the ingredients to make a second batch if it gets lost too much in the 5lbs of flour which I don't think it will.

The Conviction Dip:
Still need to buy this stuff, but I'm going to adjust the ratios a bit as Donnie suggested.
1 gallon red wine vinegar
1 bottle Valentina hot sauce (recommended by Donnie as well as you want a milder hot sauce.)
1 gallon of honey. Donnie recommended cutting down on the vinegar so that the dip is thicker vs. too thin.

SO, I'll update this thread as I go along.

WHEW!!! It was a long day yesterday, but fun as always! YOU MUST TRY THIS FRIED CHICKEN RECIPE!!! It was outstanding. Everyone raved about it, especially the dip!!! People were actually drinking the DIP!!! LOL! 60 lbs of leg quarters is a whole lotta meat. At the very end, one of the fryers started smelling really bad, like burnt plastic. There was smoke coming from the oil. Found out that the flour that settled at the bottom burned up. Good thing it was the last batch so we just moved it to the other fryer. Never thought about needing to maybe drain the oil and clean out the stuff that settled.
The dredge is heavy on cinnamon and that flavor really stood out. Then, the spice of the sprinkle blended very nicely with the cinnamon. But the star was the Conviction Dip. People stated they had never had chicken like that. Big thanks to Donnie for answering my PM's and questions. This is my go to for fried chicken from here on out!

We got a little rain later on, but it was a great day. Overcast, cloudy so it wasn't roasting hot outside.

We rented this deal. It's a karaoke machine. Works like an Ipod. You press the buttons etc. Pretty cool. Had lots of fun with it.

Some of the awesome chicken. We did batches of about 5 thighs and 7-8 legs and fried for about 11 minutes per batch.

The dip!! I made an unexpected change to the recipe. I bought garlic flavored red wine vinegar by mistake. I used it anyway and it was great. That there is about 10 of the small bottles of vinegar, one gallon of honey, and one large bottle of Valentina hot sauce, and about 1 cup od Sprinkle. The hot sauce ratio was probably too much as it was pretty damn spicy, but we freakng loved it!

The birthday boy! He chose a military/camo theme so everyone was dressed in some kind of camo! Cool cake! Toy soldiers, tanks, jeeps, etc. My mom's friend from work always makes our cakes. Always moist and fluffy. Hard to find someone that can make a good cake and decorate it without doing a dry cake on the inside!

More bird! At one point, I had about 7 of those pans on the counter. Some were dipped, others were undipped.

It was a great time. So great that I got out of bed at 1PM!! Had little bit of headache and was very thirsty for some reason!:laugh::clap:

Thanks again to Donnie, Pitmaster T for the recipe and the advice. I greatly appreciated it and as you can see, it turned out some damn good chicken!

Most definitely. Think of the dredge as more of a rub. It's very bold. Matter of fact, thanks for the idea. Much easier to do it in the kettle instead of hauling out the fryers and such. :becky:
