We Vacuum then bag freeze, then reheat in a pot of Hot, not boiling water.
Add sauce or gravy later or you may poach the meat.

I will often microwave it on 50% power for a minute or two just to knock the chill off. Also depends on how you plan to eat it - straight up or in something? I have some brisket I plan on adding to grilled cheese for dinner tonight. That I will probably throw on the flat top to heat it up before adding it to the sandwich.
I had a slightly dry flat last week. I reheated by slicing normal thickness and placing in a bowl with a good amount of beef broth microwaved 100% temp for 3 mins+. The slices came out really nice.
