I needed to figure out dinner tonight and found a tritip I had forgotten about in the freezer. Early this morning I pulled that out to thaw. It was good around noon and then went back in the fridge till dinner time.

I fired up the kettle with Kingsford and some hickory. We had thin blue. On a side note, when I was out in CA last year in November, I was able to meet some Brethren. Marty gave me a really nice walnut handle for my performer. This is probably the first picture I've posted with it! Thanks Marty!

IT here was maybe 85. I was planning on a slow reverse sear.

While that was resting, I chopped up some onion, cilantro and squeezed in a lime and added a little salt....

Wish I could find tri tips here where I live. Used to get them all the time when I lived in California. They were a regular hunk of meat that we used there. I never see them here in Wyoming.:sad: in wonder why that is?
