The first weekend in December is always my FIL extended family's massive Christmas party. Around 35 people from 3 or 4 states.
My FIL was quarantined so I was head cook. Start at 4:02 AM firing up the WSM. Had a 14# brisket and 10 butts on the whole hog gasser by 5:45.
This meant we were ready to start breakfast. 12# of bacon on griddle, 5# of small sausage links, 3# of wild hog links (big links) deep fried, and 30 scrambled eggs in the CI skillet. The ladies inside had prepared 2 big pots of grits
Brisket cooked around 300* all day with pecan chunks. Pulled at 2:20 and rested just over 2 hours. Nailed it again! Alot of yall told me after I nailed my last one (first one ever nailed) I could expect to do it more. Totally true, can feel the difference in the brisket giving it up now.
After 5 hours started mopping on the hour. Butts were panned and wrapped, then went to rest at 2:45 (1 hour rest). Butts pulled so easily (panning and foiling in their juices, is definitely the way to go). Food was great the company was even better. This weekend starts making it truly feel like Christmas time.
