Just because you are an inspector, doesn't mean you are a restauranteur. And vice versa.

The guy who rents a room from me is opening up a kitchen at the local coffee shop I frequent. I keep telling him to enforce with his guys, if you are not prepping or cooking, you need to be cleaning, everything, all the time. If every singe item is prepped and cooked, there is always something that needs cleaning
