Wanted to take a minute to say hello from North Carolina to all the Brethren. I've been lurking for a while ... just haven't chimed in yet. Little background ... I've been grilling for many years ... but just recently got into smoking because I couldn't find good brisket around here. Was born in Texas and dad's job moved us to N.C. many, many years ago. While the pulled pork is tasted ... it's hard to be a good brisket. All I have to work with now is a GOSM smoker ... but if all the planets line up ... may be trying to build a custom built if we make it back to see the relatives in Texas this year.
Enough rambling ... again, hello and thanks for all of the informative post to date ... look forward to more and you never know - I might even be able to contribute every now and then.
