Hello all. Thought I’d do a real intro and tell you a bit about myself since you’ve helped me more than you know.
I was bit by the BBQ bug a few years back now and have been slowly journeying down this path of never ending trial and error. So here is a bit about my journey...
I love BBQ, always have growing up as a child. But ignorance is bliss, I had no idea the BBQ I was eating was really a sad excuse for what I now know as BBQ. Regardless, I enjoyed it and pursued it. At some point I got my first grill and started my hand at playing with fire. I started with the basics but at some point my mind drifted back to BBQ and I made some ribs. It just wasn’t that good. I began to try different things and read. I eventually bought a smoker box and some wood chips. After playing with that for a while I thought it was the grill that was the issue.
I ended up getting a Weber Summit (propane) grill with a built in smoker box. My thought was I had the best of both worlds and could cook some amazing BBQ. But it just didn’t seem to produce what my head thought it should taste like (and since I don’t have good BBQ in the area, I was really guessing at what good BBQ should taste like). What I discovered is that all the smoke just went straight out of the grill. In order to prevent this, I ended up putting a sheet on top of the grill to force the smoke to go out the bottom of the grill (yes, I’m not lying, this was a big fire risk and I had water nearby in case). I followed recipes, read this site and others but couldn’t get the smoke flavor or tenderness I wanted, the temps were too high, it was expensive to run propane for hours and I was frustrated. It was time to buy a dedicated smoker... a WSM.
Ever since then I've been learning and experimenting. Looking forward to tapping your brains and learning some more.
