A small Kamado style grill. I don't think it is an actual Kamado grill as it is not ceramic. It is kinda like the design with a small area for charcoal with easy to use dampers on the bottom and top. I don't know what I will cook first and would appreciated your opinion.

I do want to smoke something first. I am considering the following:

Smoke a whole chicken

pieces of chicken

just wings

a slab of ribs

Any suggestions would be appreciated.

What is a good way to monitor heat?

I suppose I should use soaked chunks of wood as opposed to chips.

Looks forward to try this week.
 
Don't soak your wood.

Learn to control temps on your particular grill.

Then start with a fatty or something that won't matter much if it goes wrong.
 
Any chance you can ID or post a pic of your cooker so we can see what you're cooking on?
 
Whole chicken or pulled pork are somewhat forgiving, but I do not find ribs to be IMHO.


Ribs are my kryptonite. Truth be told, i have better results smoking for a hour then finish in my pressure cooker for 30 min, glaze then in the oven's air fryer setting for 5 min. I look at it as a cheat code, great results in less then 2 hours.
 
Thanks for the great suggestions. I was going to get some Baby backs but now maybe I will either go with Chicken thighs. After that, I will go with pork shoulder or butt and then ribs.
