The comments about using sourdough pie crust got me thinking why haven't I thought about doing so? It simply never crossed my mind. Some research of recipes and a weekend feeding of my starter resulted in this - a disc of pie dough, something new to make with the discard.

Frozen for now, but can be readily thawed and used for future pie making, Guinness or otherwise.

I'm curious re: the taste of sourdough pie crust vs. non-sourdough.
