Grass fed Picanha from Wild Fork Foods, seasoned with Q-Salt and slow smoked (and then reverse seared) on the Shirley with cherry wood.

I have a prime picanha that I bought from Wild Fork and have yet to cook - were you happy with the quality of it?


Oh yea! Very tender and tasty and this was choice grade.
I’ve been happy with almost everything I’ve gotten from them.

It is not the best quality meats, and not the lowest, but a satisfying mid grade that works well for me.

No sense of wasting’ some good heat,,,

Made one of those last week. Turned out well.

I've put in a couple orders from them the past coupe weeks. Very happy with results of almost everything. Did not think their pork chops were great - needed brining.

A friend is coming over this weekend with a high end bottle of Sauternes so I bought some foie gras. We will see how it is.
