Please consider this my entry into the "Ribs" TD.

Beef Short Rib Plate with Chimichurri and sides of Garlic, Cheddar, Sour Cream Mashed Potatoes and Jalapeno Corn.

This is my entry into "Ribs". Beef plate short ribs, seasoned with Redneck Cooker rubs and cooked on an offset with hickory.

Looks like these were cooked last weekend based on the photo EXIF info, so they would be a valid entry if they are intended to be an entry.
