Finally getting around to cooking one of the leftover tri tips cabo scored for the Carolina / Southeast Bash. Been thinking about it for two weeks and today is the day! Took it out the freezer Wednesday morning and thawed it. Trimmed the little bit of freezer burn off yesterday and coated it with a paste of Bovine Bold and Worcestershire sauce. Loaded up the triton with a snake of lump and two chunks of mesquite. Hit it with another sprinkle of BB and let her rip!
