Anyone else love pickled red onions?

I' am an absolute onion fiend lol. I love to use these in all my burgers and hot dogs and sammy's Enjoy. Made some the morning of the 4th, used them as a topping on a pulled pork hotdog. Everyone loved them, I was a little surprised how big a hit they were.

We do pickled red onions also. We also do pickled radishes and carrots together in the same jar and we do pickled jalapenos; cowboy candy.

Nope but I thought about doing beets. I love the sweet, pickled beets in the jar but stuff's getting exp.

Never got into pickled onions, always preferred a nice crunchy raw onion.

Based it on this, I just eyeballed some pickling spice I like the flavor of and added it to the jar. The brine mix was this recipe though. They’re pretty simple so I try to not overthink it.
