High Heat Brisket Help Needed Please...

Can anyone help a brother out? I put on a brisket flat (my first) on my drum this morning at 8:30am. Drum was running around 300-325* since I was going to try the high heat method. Well after about 2.5 hours the brisket had reached a temp of about 170* so I wrapped in a foil pan with some beef...

Prime Ribeyes (lots o' big photos)

I had this great idea to enter the kabob throwdown using these steaks, but once I got these steaks out, I couldn't put skewers through them. I was going to just do one skewer through both steaks and say it was my kabob. :) Instead, I realized these had to be more lovingly treated. I tried a...

Kamado Quail, Snapper, Tenderloin, Peppers & Zukes

On the weekend, Humpty the Copper Cooker, a rescued Kamado/BGE, starred in Cookouts #2 and #3 (since its Phase 1 repair). The clay pot had new cracks from the its second firing, but we went ahead and cooked anyways. Here's what was for dinner. Roasted Peppers. Beef tenderloin grilled...
