A bit of chivo in the drum

I received some goat meat from a friend and went the easy route with it.

The meat was already cut up so I just rubbed with oil and seasoned with Dinks. I usually marinade overnight but skipped it this time.

into the drum with a kiss of mesquite...

after it reached the color I wanted I put it into the DO with some beef stock, onions and seasonings...

I let it go til tender then added a few chiles and onions...

That was it, supper!

Goat, black beans n rice, smokey grilled onions and chiles and a couple of hot corn tortillas...

added some guac and MachoMayo Roasted Green Chile sauce for dippin'...

The meat was fall off the bone tender. I was happy the way it turned out without marinating overnight too. The Dinks was all that was needed.

Just a simple meal but I liked it. :)

First let me say that the cook is impressive as always sister. If my old eyes do not deceive me, that bag of rub says Udder Madness on it. Brother Paul Shirley sent me 5 pound of it a few weeks ago. It is simply outstanding on beef clod. Again, great cook.
 
Chivo...I've been schooled. Never tried it but the stuff you posted makes me want to! Looks great, cowgirl!

Thank you Greg! Goat meat is pretty tasty if you cook a young one. These are boer meat goats. Hope you give it a try sometime....and keep me posted if you do please. :grin:

Nice cook Jeanie, I could hurt myself on that. I need to hit the sale barn and pickup a few 4 legged weed wackers once they finish cleaning out some brush I'll invite 'em to dinner:roll:

Thanks Bludawg! I could use a few to mow some too. The weeds are over belly high on the cattle and horses.
Would love to see a goat cook from you. I know you would do it up proud. :thumb: :grin:
 
Mmmm... Goat is wonderful. If you've never had it, you should. If you like lamb, I think you'll like goat, somewhat similar taste in my opinion.

Jeannie, you're killing me. First the salmon, now the goat.... Aargh!!! Now I need to hit the local Mexican market too.

Hmmmm . . . so goats will do your mowing and then you can eat them? Do you need more than one for a small back yard? Wonder if they can get in thru the dog door?
 
I love lamb and I have cooked cabrito many times and it was great. I have never tried chivo. It looks fantastic. Great cook, Jeanie.

I know that cabrito is like veal is in beef, how much difference in taste is there between chivo and cabrito ?
