I received some goat meat from a friend and went the easy route with it.
The meat was already cut up so I just rubbed with oil and seasoned with Dinks. I usually marinade overnight but skipped it this time.
into the drum with a kiss of mesquite...
after it reached the color I wanted I put it into the DO with some beef stock, onions and seasonings...
I let it go til tender then added a few chiles and onions...
That was it, supper!
Goat, black beans n rice, smokey grilled onions and chiles and a couple of hot corn tortillas...
added some guac and MachoMayo Roasted Green Chile sauce for dippin'...
The meat was fall off the bone tender. I was happy the way it turned out without marinating overnight too. The Dinks was all that was needed.
Just a simple meal but I liked it.
