I often cook bs chickrn thighs in the moist envitonment of a crockpot. They come out good for pulled chicken.

I want to get some smoke on my next cook of b/s chicken thighs, so i bought a 40 pound box and want to cook them on my xl big green egg.

Im afraid a basic low slow cook will create chicken leather, but a hot fast cook will not get these tender enough to pull.

Anyone experienced in cooking pulled b/s chicken thighs?
 
Hot and fast will get them tender enough to pull, an low and slow will not render leather if you monitor your meat temps.

If you still iffy about it, brine them to add moisture.
