Adam savage formerly of mythbusters and currently of his own website 'Tested' teamed up with food scientist and James beard cookbook of the year winner Kenji Lopez-Alt for a video on the best way to sear a steak, a searzall propane torch, on a charcoal grill, using a charcoal chimney with a grate and using a grate over a high heat aluminum forge.

The video is on the long side but it's quite interesting, the thing that bothered me is that for two guys who use science to prove points they picked the best way just on taste, which when I say it doesn't sound so ridicules.
 
Cool video. I haven't seen that last contraption before but it sure made short work of those steaks. :clap:
 
So they skipped out on testing a hot cast iron skillet?
Nor did they test a forward/reverse sear using a grill entirely. While I liked using my Anova for a reverse sear because of the lower rate of failure, I sometimes find it lacking flavor. You basically have this whole center of tasteless (or boiled) meat with a thin band that has some flavor, not to mention all the un-rendered fat remaining on the steak. Also, I find a sous vide steak is much less juicer, which you can see from this video. When they slice it there's no juice coming out at all.
