Hi All What kind of beef ribs should I be good for smoking. I've seen a few different kinds last time at Restaurant Depot..Would like to give beef ribs a try.

A place like that should sell the entire beef short rib plate. I did one the other day and they were pretty good. Gives you the Fred Flintstone dino bone look!
 
Yep, I prefer to smoke the plate ribs. usually 3 or 4 bones, all attached, with the meat on top of the bones.

Should look something like that. I believe the IMPS/NAMP number is 130.
 
I have brought beef back ribs from restaurant depot with good results. The only problem is there is not alot of meat for work, but they are delicious.

Those are back ribs, cut from off of the rib primal. IMPS/NAMP 124. They have a small amount of meat, that gets even smaller once cooked.

Beef plate ribs will cook up like this...

Those sound like the dino bones I'd be wanting to smoke
 
That's the one I would guess too. Worst case, open the box and look at them. Should be a nice square of meat, maybe 12 X 12 X 2 and you should see some bones going from one side to another...

What is a good way of smoking these? Interested in this thread.
 
I season with SPOG, smoke at 275* for about 6 hours. Pull when a toothpick between each bone probes tender.
 
Bone in chuck ribs.
Meat popsicles!

I like mine (and most all beef) seasoned with SPOG.

The only problem is at RD,I only seen packages of 20 lbs and up. :mad::mad:

Freeze it Dan. They were frozen anyway. The 20 lbs is usually 4 5 lb pieces.

Also I would only suggest staying away from standard and select grade. Try to find choice. The Angus will have better marbling in most cases but the choice base grade beef is still awesome. You want the ones with the 4-5 inch bones rather than the 7 in bone one. I forget how its labeled but they have two types. One plate the other not labeled as such. As I remember the RD packaging you get 4 pieces stack two at a time with 4 or so bones in each of the four pieces. There is nothing better but really not a beef rib. Those are the long bones stripped of the ribeye. They are normally huge and contain 10+ bones of which you normally see shiners due to the price of ribeye steak.
