Barbacoa de cabeza with pron

So I wanted to try and make some barbacoa. Called up a butcher friend and acquired a cow head. Didn't go the traditional in the ground method so i fired up the smoker and threw it in there.
Smoked unwrapped at 250 for about 4 hours. Seasoned with salt, pepper, garlic, and a little cayenne.

Then i sprayed it down with a Worcestershire and water mix and poured some beer in the bottom and wrapped it real tight in foil

Went another 6 hours. Finished product

Aw man, you are killing me here! Cabeza is the best way for making barbacoa. Did you guys eat the brains, tongue and eyeballs too? Love that stuff! I'd hit lots of those tacos Buddy!

Looks awesome. Can't find any heads around here. The closest I've been able to come is to use beef cheek meat. Sticky, sweet and delicious.

Yep. cooked the tongue separate then cut it up and added it back into the mix along with the brains and eyes
 
Looks great! Beef cheek meat is one of my favorites. Your taco looks outstanding!
