Hi all!
I/m on my 4th smoker- I can't remember brands but my first was cheap, small, and worked ok but got me hooked. The second was an offset smoker inherited from my Dad. He never used it because my Mom didn't like the smoked meat- could have been the cook... 3rd was a combo job- didn't like it at all. Propane, sear, charcoal, and smoker in one. The fire box was big and too close to the very small smoking chamber. I had to put a heat shield in there to help regulate temps.
Now I am on a Big Joe Ceramic cooker. I love it. Holds temps and can sear a steak like nobody's business. I am smoking the Turkey tomorrow. The plan is to Spatchcock it, rub under the skin with bacon butter and get a decent rub on the outside.
I also homebrew beer- good hobbies...
Anyone got a good turkey rub I could use? I know you do- come on :clap2:
