I have a 17lb prime brisket on my LSG IV now, and it is probe tender at 185. I have never had one be this tender at that temp. It is usually higher. I know I don't normally go by temp, but it is normally higher than this. Anyone else have the finish like this?

There always closer to 200 for me

Yeah me too...so I feel its odd...leaving it on some more.

What temp are you cooking at? I cook at 300 or higher and never check before 195. Lower cooker temps could lower IT finish temps.

Was at 250ish most of the day. Sliced it and it came out superb. Making some brisket delivery early tomorrow before the game.

My cook temps are between 235-250 and I'm usually probe tender at 195-197 depending on the marbling.
