Went to check the internal temp of the turkey's I have on with a probe type (Thermopen type) thermometer and a bunch of the juices squirted out

All I could do was think that I just ruined the bird.

Yeah it has, don't think we lose too much juice, I've started trying to probe on the area at the skin edges, go horizontal and not pierce the skin.

The juice pools around the bend in the leg and, if you brine, it is going to be one helluva juicy bird any where you probe it.
