please accept this as my entry photo in the hit that TD.. home made chili cheese burger with extra pickles, pickled chiles, and aged cheddar, would you hit it?

Hey Bob... I'd hit that too. Love the char you got on them. I need to buy me some pork steaks...

This is an official entry...

There is a monthly four-ingredient challenge in a Facebook group that some of us are part of. The September winner was none other than our very own Shagdog and he chose the following ingredients for October...

Apples
Jalapeños
Brie Cheese
Skirt Steak or Flat Iron Steak or Flank Steak or Hanger Steak

Here is my entry...

Toasted Garlic Crostini with Brie, Grilled Flat Iron Steak and Apple-Jalapeño Chutney

For the crostini I took a loaf of french bread and sliced it on the bias, brushed it with garlic-infused olive oil and toasted them in the broiler for a few minutes.

The Flat Iron was brushed with olive oil and seasoned with Weber's Chicago Steak Seasoning and then grilled to medium rare.

While the steak was resting I topped the crostini with sliced brie and put them in the oven to melt the cheese.

The finished crostini with melted brie was topped with a slice of steak and then a dollop of the apple-jalapeño chutney and a thin slice of jalapeño.

firepit lamb chops

official entry for the Bob hits things TD :wacko:
quick weeknight cook...k-salt and pepper on some chops from the lamb we just picked up. let them get happy for a bit

got a small fire going in the pit, and put on a few spuds, followed a little later by the chops. let them go indirect for a bit while I threw the frisbee around with the kid, then gave them a quick sear

I think it would be wrong not to!

Fresh Dorado Fish Tacos

Please accept this as my entry into the "I'd Hit That" Throwdown.

My brother had come out from Oklahoma for a weeks vacation and he along with my other brothers went fishing and caught limits of Dorado.
(Also known as Mahi Mahi but in Mexico they are call Dorado)

Here are a few pics.





On Friday I cleaned the Dorado.






Now I took some of the fillets and cut them to size. Sprinkled on a generous amount of Tajin seasoning and placed them on the kamado. It was approximately 400 degrees. I let them go for approximately 2 to 3 minutes per side. (You don’t want to overcook them)

Cut the pieces up into taco size pieces.

And made one of the best fish tacos I’ve ever had. (Fresh tortillas, fresh Dorado, fresh cut cabbage, fresh Pico de Gallo, Mexican cheese, White sauce and Tapatio Hot sauce ) Please use the picture below as my polling photo.

Dang I was hoping that DerHusker wouldn't enter with the fresh fish posts he put up so I could possibly get a vote. I know who I am voting for already now, and here it to probably my first zero!
