Beef short ribs, my first attempt.

So I had seen some recent inspiration that pushed me into doing my first beef short rib cook. Here is how it went.

First, I prepped the ribs with SPOG, sugar, and chipotle powder.

Next, I needed a side cooked on the grill, so I went for the Weber recipie of the week, a wasabi twiced baked potatoe (but I substituted horseradish for the wasabi).

That color penetration is something to behold - well done! If you can find full length 3-4 bone plates try them. Where I live most stores have full cryos, they are happy to sell whole but you have to ask for them.

Also, beef back ribs or short ribs, try lining the rack with bacon (attach with toothpicks). It increases the edible yield on the rack edge bones, and the bacon is cooks treat - it's sooo light and crispy, give it a go.

Hard to believe that is your first time cooking short ribs. Those look like they have been cooked by a seasoned pro.
 
Details? How long did you cook them, what temp, what type wood, and most important, were they probe tender? They look great! :thumb:
