Not the garlic flavored Portugese version, just porky

What is the general flavor of the ones you like? I make my own occasionally that I think are great,but have no idea if they are an accurate representation of what you are looking for. Any particular flavor that stands out? The ones I make have a bit of garlic,but it's certainly not the main flavor.

They taste like pork with some seasoning. Like a good chunk of the money muscle,
ground up and put in a casing. Seasoned, but no smoke...grilled.
