At 99c a pound, Mrs. SJ brought a shoulder home. Now that I think about it, it should have been 2 or 3. Oh well.....

Mustard Coating......South Seas Tri-Tip rub overnight.

UDS with *mesquite* (should have peeked at my stores and gone to the store to get some cherry, but what the heck).

Smoked to IT of 195, foiled, wrapped and stuck in a cooler for an hour.

Looks like you nailed it! Never done pork with mesquite. How was it? Cheers!!!

Surprisingly good. Mesquite is my last resort in wood choice, which is why I always have it around. The trick is to not overpower the shoulder, which mesquite can do. But I got the right amount of wood in the basket.
