FIRE IN THE HOLE! Tandoori Cornish Hens on the Kamado

With the Gamebirds & Poultry Throwdown in full swing and about to end, I thought I would toss an entry into the ring. Had to think a bit about what I would do, then the idea of Tandoori Cornish Hens came to mind.

When we brought the 2 birds home, the cats seemed to approve:

First thing we did was to split them in half:

Then pulled out my Tandoori recipe:

Then, after much work, we made the wonderful & sacred anointment for the birds:

The cornish hen halves went straight into the Tandoori marinade bath to soak up all the spicy goodness:

Many hours later, it was time to fire up the Kamado. While I don't have a Tandoor charcoal oven, a Kamado fired up super hot is a very close approximation:

Hot coals dumped into the Kamado firebowl:

Let's get a look on top. Looks like there's a FIRE IN THE HOLE!

This is exactly what you want when trying to duplicate tandoor style cooking in a Kamado - super hot fire & temps! The temp gauge was reading close to 600 degrees at this point!

Now the birds go on:

About 20 minutes later, I flipped them:

And another 20 mins, they were looking really good. This was about 5 mins before I pulled them, and when I did, the breast meat was reading about 145, and thigh/leg meat around 160:

Never tried Tandoori Cornish Hens before, but the verdict was an overwhelming yes that we will do them again soon!

Damn Moose, PUBLISH THAT BOOK! Bet it has a bunch of other goodies in it. Oh yea, those are some grest looking baby birds :clap:
 
Those look great! Man cooking chicken right over a 600* fire I would think would burn them before they were done. But obviously yours turned out nicely!
 
Gotta love Indian cuisine and your Cornish hens look great!

That's our recipe book, and it has a bunch of recipes from both the internet and our own proprietary recipes. Most of our own recipes are on my blog if you want to check them out.

I didn't skin and score the meat this time due to the size of the game hens, so thought I would try it differently this time. Frankly, I like it both ways, they are just different. If you leave the skin on, the skin takes on most of the marinade flavor, if you remove it, the meat gets more flavor.
 
I still have yet to cook cornish game hen - not sure why, just haven't gotten around to it yet. :oops:
