fried eggplant pie

Took the day off to drink beer & eat pizza with a few buddies :clap2:. Sliced, floured, egg washed & breadcrumbed eggplant fried in olive oil & salted, sliced further & onto the pie then onto the egg at 700 degrees for about 4-5 minutes:

Fark yeah! I love making pizzas out of egg plants myself, it's just a paint to draw out all the moisture first.
