You beat me to the punch on that link. :wink: That said I've only Bukboarded one or two picnics (usually I Buckboard butts or loins), and I did remove the skin, and bones, but went longer in time due to thicness. Picnics have some muscles with more myoglobin making them darker, but the curing process and finished product came out pretty good. If you get too western when removing the bones, use some butcher twine to hold it together.
