So I'm triming up some pork for a chili, and I'm left with about a cup or so of pork fat. I hate to toss it-- I'm sure it would come in handy for something, but I'm not sure what to do with it. I know lots of people keep bacon grease in the fridge to add flavor to dishes. Is there anything I can use the pork fat for? Should I freeze it in small batches? Cook it down first? Any suggestions would be geratly appreciated.
 
I like to give it a slight smoke if the pieces are big enough to fool with. Just throw 'em on for a little while while your smokin' whatever you cut 'em off and you got yourself some good bean flavorings !!
 
Some of the best flavoring in the world. Good in beans, for wilting lettuce, add stir fry. For me first choice would be beans.
