An Italian walks into a kitchen (stop me if you've heard this before) and finds the following:
Boneless Chicken Breast
Salmon
Red and Orange Peppers
Tomatoes
Tortellini
What to make for dinner? MSU! Or to be more specific:
Tortellini with Grilled Chicken and Salmon over Tomatoes and Roasted Peppers
Some of the ingredients -
Let's get the Weber 18 fired up and grill some of these. Chicken, seasoned with Plowboy's Yardbird and the Peppers go on first -
Chicken's done -
Time to add the Salmon, seasoned with Plowboy's Fin & Feather -
Over to the hot side of the grill -
Meanwhile, my wife was tasked with making the sauce, for which I forgot to take pics. She did a superb job as always!!
In a skillet go the diced tomatoes, minced garlic, chicken broth, white wine, capers. She added the roasted red and orange peppers near the end.
Dish up the Tortellini, add the sauce and top with a choice of protein - grilled chicken or grilled salmon or in our case, both! Grated parmesan to top it all off and dinner is served.
