Haven’t done ribs like this, but I think pretty much everything with the Vortex is lid on (and rotate the lid once or twice since there are usually hot spots following the top vent).
 
I was thinking of this method, but pull at 165F, wrap in foil with butter, and hold for 12-18 hours at 150F to serve the next day around late noon for Xmas dinner. My mom wants ribs, and i suggested just doing single steaks instead of Prime Rib Roast. Will be soo much easier on my part.


Side note: My mom and my step father love my ribs because they are fall off the bone and they have dentures. So that's why i want to tweak this method. And doing filet mignon steaks.
