very simple... scorching hot CI pan, Weber Chicago Steak seasoning, sear hard, on one side, flip, melt half a stick of butter and a crushed clove of garlic and then put in the over til it hits temp, basting with the butter several times, absolutely perfect. no sides, just the pharkin meat. beautiful
