Pigs head?

My sister sent me a pic of some pigs heads at the local Walmart meat counter. I assume that they're edible, but... umm.. how would you cook one?

Remove the brain first for pig brain scrambled eggs. Creamiest scrambled eggs you will ever have.

I was friends with a family that made and sold hot tamales. They sold beef, pork, and hog head tamales. The hog head tamales were twice the price of the others. They boiled the head hole in a pot with lots of spices in the water, then scraped the meat off to the make the tamales.
