A bit early to start posting this, but maybe it might crack a few ideas over the weeked for the Noodles Around the World Throwdown!

Japchae is a Korean Noodle Dish which I'm going to do "SmokinAussie" style! :mrgreen:

I'm roughly lifting recipes from my 2 fave American / Korean cooks:

With the short ribs I pulled out some Kalbi marinade I had in the freezer.

The twist is to cut the ribs into a thin flat strip. Koreans do it this way and if you go to authentic Korean BBQ restaurants (which are very popular here), you should order this.

Start the cut like so wit a boning knife.

Slice along with a cleaver, basically "unrolling" the rib meat until it's more or less a long flat piece.

You end up with this.. I didn't do it that good.

Marinade in the Kalbi mixture for 24 hours.

OK Farkers... Here it is!

Boiled these noodles. Now Sweet Potato Noodles are a fantastic thing. Not very carb heavy, fantastic flavour and they hold together really well in a stir fry, as you will see.

Ribs just about done. Now just so you know, that Kalbi marinade has Kiwi fruit in it, so that tenderises the meat quite a lot.

How was it? Bloody good. Noodles are a keeper. Beef was pretty tender.

Will definitely do this again.

Brilliant, Bill! Beef as well as the noodles look amazing. :clap2:


As an aside, when I started making kalbi some years back, I cut the ribs as you did from the bone - it takes a bit of practice to get it just right and uniform thickness.
 
I want a plate of that! Never thought of using enoki mushrooms in a stir fry, did they hold up pretty well?

Enoki's are pretty resilient. The original recipe calls for button mushrooms, but I had enoki's. It makes sense to use them anyway because of the shape. You cut the carrots to battons and so it lends a uniformity to the dish. The only thing I'd do different is add more of the snow pea shoots. The original recipe calls for spinach but the snow pea shoots are much nicer.
