Made a Brisket and other things for some friends and family on Sunday, but was a little too busy for pics. Was very happy with the results of the Brisket. Monday, I decided to make a nice little Brisket sandwich with some leftovers, it was too pretty not to snap a few pics.
Brisket, a little sauce, mayo, lightly fried jalapenos, smoked gouda & cheddar on a buttered toasted hawaiian sandwich roll. This thing did not disappoint.
On Saturday, my oldest son held a lift-a-thon fundraiser for his high school Senior Project. I contributed in the way I could best, by providing a nice little buffet for those working hard lifting weights and working up an appetite.
I cooked 42.5lbs of Pork Butt w/ 3 sauces, 20lbs of Bonless Skinless Thighs, (4) 1/2 pans of Mac n Cheese, 12lbs of finished Cole Slaw, and (2) big bowls of Salad with some homemade Maple Balsamic dressing. Figured I'd be coming home with some leftovers being we had about 60 people at the event. Came home with just enough Pork & Slaw for two meals. I guess they were hungry...
