Here's a photo of finished beef bacon slices...
Slightly different texture and flavor than pork bacon. Still good.
However...
This was a decent grade of beef, and the meat there was was well-marbled. Most of the beef belly was pure fat, though. At a cost of over $10 a pound, it was an interesting experiment, but I'd just as soon stick to pork belly for bacon.
