OK, so I've NEVER tried to make my own recipe. EVER.
After inquiring a while back about a baked bean recipe, I decided to make my own, which is technically a hybrid of 2 or 3 different recipes I found, with a couple of my own additions.:becky:

I've tweaked these and I think they're done. These baked beans are off the farkin HOOK!!!

I'd love for some of you to try them out and let me know what you think. I'm not typically a baked bean guy, but these are good.


Wampus's Peach Bourbon Baked Beans

Ingredients:
1 lg can (1 lb, 12 oz) of Bush's Baked Beans
4 slices of thick sliced bacon, chopped
1 lb maple fatty (smoked ahead of time), crumbled/diced
1 med onion, diced
1/2 bell pepper (I like orange or yellow)
1 can (21 oz) peach pie filling
1/2 cup brown sugar
1/2 cup Famous Dave's Apricot Bourbon BBQ Sauce
2 TBS worschestershire sauce
1/3 cup bourbon
1 lg clove garlic, minced
2 TBS yellow mustard
1 TBS rub

Directions:
-Smoke Fatty (can be smoked well before), crumble or dice
-Brown Bacon in skillet (about 1/2 way)
-Add onion & pepper - cook until just carmelized
-Slowly add bourbon & garlic - simmer until caramelized
-Remove from heat
-Add remaining ingredients to skillet, mix thoroughly
-Put in pan and place in smoker
-Smoke for at least 2 hours, stirring occasionally



The only thing that I may or may not change is to use cooked pinto or navy beans instead of baked beans. When I originally tried this I tried soaking raw pintos, but didn't do it correctly and the beans were very tough. The flavor was perfect, but the beans were tough. Today I did it with Bush's Baked beans and I'm just not sure if the sugar, molasses, etc that's already in the baked beans is too much and if it would be better with just regular canned pintos.

ALTHOUGH....I did them this way tonight and I gotta tell you.....the DID NOT SUCK!!!

The bourbon and the Famous Dave's sauce give them a unique flavor.

I was wondering about the peach pie filling in my beans too. Sounds good Wamp!

Wampus---just a note. A couple of years back there was a post about using brown
sugar in beans...apparently, if you soak, then use the sugar before you cook, the beans
will toiughen up every time. I kinda think Bush's and Van Camp's cook their beans first
and mix everything together later. I started soaking and cooking my beans first and
haven't had any trouble. Seems to work as good as using cannned pintos, etc.

Yeah, I mistakenly thought that soaking beans just meant putting them in cold water overnight. What I found out after talking with my Mom and some folks here is that the best way to "soak" dried beans is:
http://www.bbq-brethren.com/forum/showpost.php?p=1562965&postcount=13. Mom offered the same advice as Bull did in that link. Plus, he suggests (as you do) to soak and soften by cooking the beans BEFORE you put them into a recipe. Don't know if it's the BS that did it, but seems you are correct.

Well, the local Grocery store here in my town stocks Famous Dave's. If you can't find it, you could always use any sauce of your choice, I suppose. I chose that one because the "Apricot/Bourbon" seemed logical and it also has a very subtle kick to it that lends itself nicely to the recipe. I'm gonna have to give this one a try myself.... I love peach and this sounds like a pretty sweet (literally) baked beans recipe :)
 
Yes.....very sweet. But more than just that, there's something unique about the flavor. I get hints of the garlic, the bourbon, the peach, the mustard, but (IMO) not too much of just one thing.

My favorite thing about it (if I had to pick one) is the pieces of fatty you come across in a bite.

Seriously hoping folks check this out and follow up with me with HONEST feedback.

Too sweet?
Good balance of flavors?
Too much of one thing or another?
Just right?

Ok subscribed to this thread to try out your recipe soon. I recently picked up the FD apricot bourbon sauce and loved it. It's on manager's special sale at my local Kroger.
