Our food truck fun is going great! I am looking for a site for us to open a restaurant. One site has a cool little house, great location, trees in the yard. I'm exploring how I might be able to use this via putting our "Kitchen" in a modular building, rather than remodeling the back of the house. After all, I'm already going to be cooking most everything on the smokers, which will be in a mesh enclosed trailer or smokehouse. This particular site is for lease only, so I can't be certain how long I could be at this site (It's not permanent, but probably 5+ years).
Minimum Kitchen needs:
6 burner stove
Double Oven
36 inch flattop
24 inch fryer
Big 3-part sink
Handwash sink
Large work table
Smaller work table
3 door fridge
2 door freezer
two warmers
Some dry storage (the house will have room for storage, and room for more refrigeration equipment).
Any thoughts?
