Shrimp and Grits?

Have any of you ever catered shrimp and grits before? I am doing a wedding later this year, and this is one of the requests that the bride has made. I have no issue cooking them, I have just never catered them before and am not sure the amount to prepare or how to price them? I know shrimp prices vary depending on region (they are fairly reasonable here in GA most of the time). They will also be having: Chicken, green beans, mac n cheese, salad, and rolls.

Any insight/advice on how the amount to prepare and how to price this would be much appreciated.
