Reheating pulled chicken

So I'm doing 10 whole chickens and I want to go ahead and cook them for a event this coming Thursday. Whats the best way to reheat the chicken without it drying out??
 
Vacuum seal it in Foodsaver bags, maybe add a little chicken broth. When it is time to reheat, either use a Sous Vide circulator or put the bags in a pot of water at 150 - 160F.

I thought there were strict rules about FoodSaver bags for selling food to the public.
