North Alabama to Shreveport

Road trip! Heading south and west for the bayou bash. Probably take 2 days to get there. Will stop in Jackson or Vicksburg for a night on the way. Any good eats at either of those? Hope to pick up some good andouille and boudin to bring home. Surely somewhere along I-20 there will be some of that stuff?
Any suggestions are appreciated.
