So, here's the final result of my day...
I'm my harshest critic by far, because everyone is loving it, but I can tell I got it a tad over cooked, but this is my first brisket on this UDS, and everything is a learning experience that I can build on.
There was no brine, no spraying, no rub, no injecting... just some kosher salt and time in a 250* drum...
