Beef cheeks = real Barbacoa. Chuck doesn't match the taste and texture IMO. Looks fantastic Marc. I'd come back for seconds too!

Try this recipe with lamb, it's stoooooooooopid good.

I've always heard the real barbacoa is with lamb or goat. I've used this recipe with beef, then tried lamb. Never going back to beef for this.

I have heard that too...what cut...would boneless leg work?

Thanks for the info... never checked Walmart, I will because at this point I have nothing to loose...

Greg, no doubt you will find them in your area at Walmart. I can get them down state at Walmart, and last I looked they had a huge selection of different cuts designated as Mexican/Latino. A lot of my friends still head up to Aurora area for Latino specialty items so I'm sure Walmart would probably have similar towards Chicago......Good Luck!


Marc - Food looks fantastic. Makes me want to stop and grab some cheek meat!
