Yeah, brisket in Ohio is never what it is in Texas. Of course some of that in Texas is not what it is in Texas either. There's just more that's really good.
 
LOL, I've had some pretty mediocre brisket...in Texas.
 
A few years ago there was a place that got really good reviews online, rave reviews. Must travel, best BBQ in Ohio. It was a pretty far drive but I did it one day, and I got the brisket.

It came shredded, in a cup, and it was so pale that I thought it was pulled pork. Not a trace of bark to be found. Either all the reviews were fake, or their smoker broke and they decided to serve steamed brisket.

Well hate to say it but when a crappy meat sauce (aka as chili in that area) on top of spaghetti noodles is a thing then you are not going to ever have a good outcome. And yes I have been there many times and had the locals take me to the “good” places and it is all bad.
 
Declaring something is all bad is pretty silly. That may be your opinion, but we all have those. I could take you on a culinary tour of the area that would knock your socks off.
 
Yup, I haven't found a go to bbq joint around either. I tried the places everyone raves about as well. I gues they are good if you don't know better. I have one place serve me brisket sliced with the grain. I couldn't let that one go. The manager informed me the pitmaster slices it that way becuase people like pulling and shredding it..:pray:
 
We have one place in Cincinnati that serves a respectable - not great, respectable - brisket. But his St. Louis ribs are the best I've ever had.
 
Most of the "commercial" Que places in my area are mediocre at best. This includes their ribs and pork, but then most are chains. Some street side vendors but they too dont seem to put the extra time and effort into producing what is Great Que, just a step up from "chain" Que.
So out back I go and fire up the smoker, and the neighbors get to enjoy something that is as close to "competition quality" that I can produce.
 
On the few times we dine out-and even still fewer times it’s barbecue I get the sausage and sides. I’m seldom ever disappointed. To me it’s difficult to beat smoked cracked black pepper sausage with green chili mac with jalapeño onion and a pickle. Same with my wife she wants my brisket ribs & Pork Shoulder. There have been one or two places OK 3 that we got the large multi meat multi side platters and split with a group.
Sausage & Sides- a good choice
 
The only place worth a damn around here, Uncle Pete's, closed years ago when the owner passed away. So now, I make my own.
 
I’ve not done this in a while but we have a chain called Rudy’s BBQ. Some twitch their noses because it’s a chain but I’ve always been greeted by an awesomely friendly staff, immaculately clean restaurant and really good food and a reasonable price. Sometimes if Im out of brisket and wanting Brisket Chili I’ll shortcut and go to Rudy’s

1/2 pound moist brisket
1/2 pound lean
1 hot smoked sausage
Couple small to containers of their hot bbq sauce
Get some onions & peppers from their bar
A package of Fritos

Go home chop mix and blend and heat with some Shiner & Chili spices.
Bowl of brisket chili or Frito Pie
Fast And it’s good

I understand this and agree BBQ is labor intensive and expensive. However, certain places (small towns) it shouldn't cost as much as it would in Dallas, Texas. Larger places the cost of living is higher, real estate is way more expensive, and generally they pay higher wages. So I am willing to pay, but my hometown Que of 800 people shouldn't cost the same amount as Charleston, SC. Most of the time this is the case, Scott's here sells their BBQ for $11#. Rodney charges like $17# in Charleston.
