Looking to try other baked bean recipes. This is one I came up with last week that I like:


28oz Bush’s Baked Beans (or your favorite brand)
1 small yellow onion (diced)
1 bell pepper diced (any color)
15 OZ great northern beans
1/2 cup Brown Sugar
1tbs Worcestershire Sauce
4 slices of Bacon (cut in 1/2 strips)
1/2 ts nutmeg
1/2 ts cayenne pepper
1/4 ts ground clove
1 tbs Minced Garlic
2 shots of Evan Williams
1/2 cup Sweet baby rays BBQ Sauce
2 tbs Yellow Mustard
1 lb. smoked sausage diced ( or meat of your choice)
1 TS of your favorite rub ( I use Yardbirds)
I diced fresh Pear



Cook onion and bell pepper in bacon till tender. Add garlic at the end. Add other ingredients and put in smoker for 2-4 hours. I use a small cast iron pot
 
Just did some peach BBQ beans today to go along with some chuckies.

4 - 15oz cans of beans rinsed & drained
1 - Large onion diced
4 - cloves garlic
1-2 - Jalapenos (depends on how spicy you like them)
1 - Sweet pepper (Red, green, yellow, whatever ya got)
1 - 28oz can peaches in heavy syrup
1/2 cup - brown sugar
1/2 cup - BBQ Sauce
2 TBSP - Rub

Rinse & drain cans of beans. I like to use different varieties, this batch was one each of black beans, pinto beans, red beans & great northern beans. Add to an aluminum half pan. Dice up the veggies and add to pan. Dice up the peaches and add to pan along with the heavy syrup. Add remainder of ingredients and mix together.

You can also add left over brisket, pulled pork, bacon... Whatever floats your boat. I also usually add about a half cup of bourbon, but was fresh out.

Throw it in the smoker and cook til done, stirring every now and then, about 3 hours.
 
I use this one a lot. Last week in fact.

1, can each of black, pinto and kidney beans (rinsed and drained)

4, Cloves of garlic (minced)

36-40 oz, of your favorite bbq sauce
1 lb, Bacon cooked with drippings.

I like to place it in my large dutch over without the lid and put it in the cooking chamber of my offset near the fire box for about 5 hours. It also works well in a weber kettle. Just set it in the middle and surround it with coals and wood chunks.

nuff said...
modify to your taste but these are the best two recipes for beans I have used.
 
Big Red Fan's slow cooker homemade baked beans

I posted these in the homemade beans thread, but here they are again....

Ingredients
1 pound dry great Northern beans
6 cups water
1 package of smoked ham hocks
1 pound bacon
1 cup chopped onion
1 pound spicy ground sausage
1/2 cup molasses
1/3 cup packed brown sugar
1 teaspoon dry mustard
1 tablespoon ground black pepper
1 tablespoon kosher salt

Directions
  1. The night before, combine the Great Northern Beans and water in a large saucepan. Bring to a boil, and cook for 1 1/2 hours. Pour beans and their liquid into a bowl, cover and refrigerate overnight.
  2. In the morning, drain liquid off of the Great Northern Beans, reserving 1 cup. Pour beans and the reserved liquid into the crock of a slow cooker, add about one additional cup of fresh water, or enough to cover the beans.
  3. Cook bacon in skillet, draining on paper towels.
  4. Cook spicy ground sausage in skillet, draining on paper towels.
  5. Cook onion in pork fat.
  6. Stir in the bacon, sausage, onion, smoked ham hocks, molasses, brown sugar, mustard and pepper. Cover, and cook on Low for 12 to 14 hours. Stir before serving. Remove ham hocks in last hour, remove meat from hocks, and put meat back in slow cooker.

Here is what they look like when they are ready to serve:

Very simple recipe for me

3 cans Campbells Pork and Beans
1 small sweet yellow onion
brown sugar to taste
BBQ sauce to taste
1/2 package of johnsonville breakfast sausage links cut into approximately 1/2" pieces

Combine and bake or smoke until ready. Approximately 2 hours at 350 deg.

Have never measured, just kind of eye ball it. Everyone at my house loves them
 
Simple and traditional.

1lb Navy beans
1 med yellow onion, sliced
1/2 lb salt pork, 1/4" dice
3 Tbs dark molasses
1 Tbs cider vinegar
1 tsp dry mustard
1/4 cup brown sugar
1 tsp salt
1/4 tsp black pepper

Soak beans overnight. Drain, refill water add 1/2 tsp baking soda and simmer 20 minutes. Drain. Fill bean pot with 1/3 of beans, layer with 1/3 onions and 1/3 salt pork. Repeat with remaining beans, onions and ending with salt pork on top. Mix remaining ingredients with hot water and pour over beans. Add enough water to cover beans. Bake covered 300 degrees for 4 hours or until beans are tender. Add boiling water during the cooking to just keep the beans covered.

This is very close to what my Dad used to make. It's simple but delicious served with brown bread.
 
I like Bush BB but you really need to try Wampus BB My S-I-L said they were the best she has ever had

1 lb maple fatty (smoked ahead of time), crumbled/diced
1 med onion, diced
1/2 bell pepper (I like orange or yellow)
1 can (21 oz) peach pie filling (run knife through can to cut up larger pieces into smaller pieces)
1/2 cup brown sugar
1/2 cup Famous Dave's Apricot Bourbon BBQ Sauce
2 TBS worschestershire sauce
1/3 cup bourbon
1 lg clove garlic, minced
2 TBS yellow mustard
1 TBS rub (I like SM Sweet & Spicy)
1 TSP Ground Cayenne Pepper (OPTIONAL)


Directions:
-Smoke Fatty (can be smoked well before), crumble or dice
-Brown Bacon in skillet (about 1/2 way)
-Add onion & pepper - cook until just carmelized
-Slowly add bourbon & garlic - simmer until caramelized
-Remove from heat
-Add remaining ingredients to skillet, mix thoroughly
-Put in pan and place in smoker
-Smoke for at least 2 hours, stirring occasionally (I smoke for 4 hours)





NOTE: I've had trouble finding Famous Dave's Apricot Bourbon Sauce lately. I've substituted lately with any of these:
  • Famous Dave's Thick 'n Sassy
  • Big Butz Hot
I'd suggest anything with a bit of a snap to it. Blues Hog would be farkin great too, I'd probably add the cayenne if I used that.
The beans I won with this past weekend also had about 1 tsp of ground cayenne pepper in them, I've listed that as optional. If used without the cayenne, they're really not spicy beans at all, but have just a little zing to them.




I don't even like baked beans and I LOVE these!!! I'm gonna submit them to the Brethren Recipe Book soon.

Baked Beans

2 - 16 oz cans of beans (I use Bush Baked Beans)
Drain sauce out of can and discard.
3/4 cup BBQ sauce
1/4 cup chopped onion
1/4 cup chopped red bell pepper
1 cup chopped smoked pork or brisket (or use bacon)
2 tablespoons honey
3/4 teaspoon paprika
1/4 teaspoon dry mustard

Mix all ingredients in a large bowl. Transfer to aluminum baking pan. Place
in smoker uncovered at medium heat (225 F- 275 F.) for about 90 minutes or until heated though

Thanks, I'm going to try these this weekend. I've never tried Peach beans before, is there a strong peach or fruit flavor to the beans?
 
All of Bush's beans are fine, but if you smoke any of them, they will be 200% better. I add onions, garlic, rub and spicy BBQ sauce. If you look at all the recommendations, you can pick and choose based on your liking. I personally, do not like too sweet, but other do. Enjoy!
