I just put 3 on the WSM

Now what?

How long?

Will they be ready at noon?

how hot? mine seem to take 2-1/2 to 3 hours, but I usually stay under 300 pit temp.

Yep. The last one I did was 8 lbs and it took about 2 1/2 hours at 275.
