Rec Tec Mini Brisket time (Pron)

Just your average every day 14lb Prime brisket for a get together with friends. Went on at 4:30 am and pulled it around 4pm to hold until 6pm, made up some collard greens in the Instant Pot and apple pie with cinnamon ice cream.

A combo of the three you can see in the trimming pic. Smoking guns hot, O B que texas brisket and O B ques double garlic

I find that at lower temps around 225 to 240 that it has a good amount of smoke, higher than that and it tends lesson the smoke flavor.

And It did sit in the rub for 24 hrs due to time issues before the cook
