Default Barbacoa de Cachete--- Sweet Taco Pron

Good evening brethren!

Me and the boys hadn't hung out in a while so we planned a get together. Had some beef cheek meat in the fridge so decided on Tacos. I decided half braised and half smoked.

Simmered with onion, garlic, cumin, bay leaves, peppercorns, salt.



Smoked half of the cheek meat on the kamado.



In the meantime I made salsa rojo(red sauce) and salsa aguacate (creamy avocado salsa)

The braised meat



The smoked half (Don't mind right of the pic. Those are the inedible trimmings)



Chopped up



Fired up my griddle with lard to warm up the tortillas





Plated up Sorry had to take a bite of the smoked cheek taco

Btw that's the salsa roja on the tacos I couldn't take a pic of.





Some quesadillas on naan bread with fresh and standard mozzarella.



The guys were hungry so I took out some buffalo and wild boar sausage.

Looks fantastic!! I love beef cheek tacos. Did the smoked ones come out tender?

It was really tender. I foiled at about 170. I pulled it at 200 and let it rest about 1 hr. Most folks loved the braised but me and my brother preferred the smoked.

Believe it or not my first time making it after tasting it at a Mexican restaurant by my work. I put two and two together and nailed it.

With all the beer in me lets **burp** see

Four ripe avocados

About four roasted tomatillos

Three or less roasted Serrano chiles(skinned and seeded)

3 cloaves of roasted garlic (roasted in foil)

Table spoon or so Mexican crema (cacique)

Salt to taste

Sprigs of cilantro to taste (optional)

Touch of olive oil (optional)

half lime squirted(optional)

Dang awesome cook there. the cheek meat is so often overlooked and in my opinion is some of the sweeter meat there is
